Bon's Curry Chickpeas & Quinoa

Ingredients
Goya Low Sodium Chickpeas (822 grams-lg can)1 cup cooked quinoa3 medium ripe tomatoes, diced1 medium red onion, diced1 cup diced celery6 cloves of garlic, pressed/mincedGinger root, shaved approx 1 teaspoon or more to taste1 cup organic low sodium vegetable broth1 cuptomato sauce, no sodium addedSpices: tumeric, curry, cayenne, approx 1 teaspoon each
Directions
In sauce pan add 2 cups water, bring to boil then add 1 cup of dry quinoa. Cook on medium 15 minutes.
In large skillet; combine onion, celery, garlic, and vegetable broth, on medium heat cook until softened (approximately 10 mins)
Add tomatoes, chickpeas, cooked quinoa, ginger, spices and tomato sauce. Cook for an additional 20 minutes on low heat.
