1 Cup Milk (2% or Skim Milk)1 Tablespoon oil (Canola)1 Large Egg1 1/2 Cups of Self-Rising Corn Meal Mix
Preheat oven to 425F. Spray muffin pan with cooking spray. Measure corn meal into mixing bowl. Beat together egg, oil and milk. Stir into corn meal until thoroughly mixed. Pour into greased 12 cup muffin pan. Bake 15-20 minutes or until done.
