Cream Cheese Filled Crepes

Ingredients
Filling1 pkg (8 oz) of Neufchatel Cheese3 tsp Splenda3 Tbsp Skim MilkCrepes1 cup Whole Wheat Flour1/2 tsp Salt6 Tbsp Egg Beaters (or other liquid Egg substitute)1 1/3 C skim milk
Directions
CREPES:
Gently spoon flour into measuring cup and level with a table knife. Add with salt in a bowl and whisk together. Create a indent in center of flour mixture and slowly add egg substitute while continuing to whisk, repeat with milk. Let stand 5 minutes to allow air bubbles to escape. Heat small skillet and spray with cooking spray. pour 1/4 cup of batter into skillet and swirl around to coat bottom of skillet. When edges become cooked use spatula to flip and finish cooking (approx 30 seconds). Flip onto plate and put about 2 Tbsp of cream cheese filling across center of crepe and roll. Top Crepes with fresh fruit of your choice. (2 Crepes per serving)

FILLING:
Soften Neufchatel to room tempurature in a bowl. Add Splenda and milk and cream together using mixer.

Serving Size: Makes 4-5 servings (fills approx 8-10 crepes)
