Cajun Style Veggie, Blackeye Pea, Quinoa and Shrimp Dish

Ingredients
No salt added chicken brothBlackeye peas, frozenMirepoix Cajun Style blend, frozenQuinoa, uncookedShrimp, raw or cookedGarlic cloveSalt and pepper, spices to taste
Directions
Bring broth to boiling, and add peas and whole garlic clove. Boil for 20 minutes. Then, add quinoa and simmer for remaining 15-20 minutes. Add veggie mix until cooked through, adding salt and spices as desired. If needed, boil shrimp in another pot of water until they turn pink (then, remove shells if present). Add to other ingredients and mix well. Enjoy!
