Queso Rice

Ingredients
1.5 Cups of Rice (I used white, but you could substitute brown)1.5 Cups Chicken Broth1.5 Cups Water3 oz. Velveeta 2%.25 Onion chopped.5 Cups Pace Mild Picante SauceSalt to taste (about .25 tsp)
Directions
Bring Chicken Broth and Water to a boil. Add rice and chopped onion. Cover and reduce heat. Simmer about 15 minutes or until almost all of the liquid is absorbed. Meanwhile, chop the velveeta into smaller pieces (about .5" square) to help it melt faster. When the rice is done, uncover and stir in velveeta, salsa, and salt. Stir until velveeta is fully melted and combined.
