Ingredients
Directions
1 cup dry lentils2 cup broth1 cup water1/2 cup chopped carrots1/2 cup chopped celery1/2 chopped onion1 clove chopped garlic1/2 lb smoked sausage links (1/4 inch slices)1/4 to 1/2 cup barbecue sauce
Although I usually make this in the crockpot, it turns out fine on the stove with a little additional liquid.
Combine lentils, broth, water, carrots, and celery in the crockpot. Turn on high/low (depending on how soon you want it done) and let this begin warming up. In a small pan sprayed with Pam or olive oil, sautee onions, garlic, and sliced sausage. Add onions, garlic, and sausage to the mix. Cook on low for approx 4 hours, high for approx 2 hours - until lentils are tender but not quite done. Add barbecue sauce and cook for additional 10 minutes.
Makes approx 4 - 1 cup servings.
