Peanut Sauce with pasta broccoli and tomatoes

Ingredients
8 oz spaghetti (Barilla plus)2 C broccolli florets2 C cherry tomatoes (halved or quartered)Chopped scallions (optional)1/3 C Peanut Butter (natural style, not Jif!)1/2 C hot water or veggie stock1 t Soy sauce 2T vinegar (I use rice wine vinegar)2T oil2 cloves garlic, crushed1/2 t crushed red pepper
Directions
Cook pasta al dente, steam brocolli.
Mix together peanut butter and hot stock or water. Add remaining ingredients, whisk smooth. Toss with hot pasta, broccolli and tomatoes. Garnish with scallions as desired.
