Chicken Salad Rice Paper Rolls

Ingredients
1/2 cooked chicken breast1/4 cup salad greens 2 sheets of rice paper
Directions
Shred chicken meat and put into a bowl.

Add salad greens to the shreded chicken and mix.

Prepare rice paper by dipping into warm water in a shallow bowl and gently rotating with your fingers being careful not to soak too long. (25 - 30 seconds)

Place rice paper on a clean work surface. Place half of the chicken mixture on one edge of the rice paper.

Fold in the sides and roll to fully enclose the filling. transfer to a serving plate. repeat with remaining rice paper sheet and filling.

Some people like a dipping sauce such as soy sauce or sweet chillie etc - just remember those calories are not calculated here.
