Sue's Hearty Veggie Soup

Ingredients
- Vegetable Broth, 3 cups- Water, 9 cups- Carrots, 4 large- Chopped onions, .5 cup- 1 can (1 1/4 cups) of mushrooms- 1 can of miniature Cobs of Corn (1 3/4 cups)- Basil, .5 tbsp- 6 cups fresh chopped cabbage- 2 tsp lemon pepper
Directions
Prepare all your veggies and cook (light boil) all ingredients in a large pot for 2 hours. Makes approximately 12 2-cup servings.

    Soup is so filling. I have to admit I sustituted Frozen Birdeye corn for those little baby cos of corn (I just don't like the taste). This is one of those soups you could make as a base and just add to it - just like my Mom used to! - 3/20/08
