Mushroom-Herb Chicken with Yellow Rice & Peas

1.5+ lbs boneless, skinless chicken breasts(Salt and pepper to taste)(Cooking spray)8 oz sliced mushrooms3 shallots, peeled & sliced thin(¨÷ c red cooking wine)(1 t Italian seasoning)Boil-in-bag long grain rice(¨ö t ground turmeric)¨ö c frozen petite peas, thawed
Pound each piece of chicken to ¨÷¡± thickness.
Sprinkle chicken with salt and pepper; coat with
cooking spray. Heat a large nonstick skillet over
med-high heat. Add chicken to pan; cook 5-6
minutes per side or until browned. Remove
chicken from pan. Coat pan with cooking spray.
Add mushrooms and shallots; cook 1 minute
stirring constantly. Stir in cooking wine and Italian
seasoning. Return chicken to pan; cover and
cook 3 minutes or until mushrooms are tender
and chicken is done. Spoon sauce over chicken.
Cook rice according to package directions. Stir in
turmeric and peas.
