Cinnamon Crunch Muffins

3 cups flour1 1/2 cups firmly packed brown sugar1/2 tsp salt2 tsp cinnamon1 tsp ground ginger2/3 cup vegetable shortening2 tsp baking powder1/2 tsp baking soda2 eggs1 cup milk + 1 Tablespoon vinegar
Preheat oven to 375 degrees. Prepare muffin tins.
In a large bowl combine flour, sugar, salt, 1 tsp cinnamon and ginger. Add the shortening and mix until fully combined and crumbly. Remove 2/3 cup of this mixture to a small bowl and add the remaining teaspoon of cinnamon to it. Set aside for later.
Add baking powder and baking soda to the remaining flour mixture. Add the eggs and milk + vinegar.
Spoon into the muffin tins to about 2/3 full. Sprinkle each muffin with about 1 Tablespoon of the reserved topping. Bake 15-20 minutes.
