Fresh Tabouli

Ingredients

1c whole wheat couscous1.5c water2c finely chopped fresh parsley 1/8 c (2Tb) fresh chopped mint leaveszest and juice of 1 lemon1 medium plum tomato, chopped
Add 1.5c boiling water to
1c whole wheat couscous, stir and cover. Put aside and chill once water is absorbed. (This yeilded 4c once done)
Clean and spin or shake dry parsley leaves. Cut small with scissors, discarding stems. Do the same with a few mint leaves.
Mix into cooled couscous.
Zest and juice one lemon and add to greens and couscous.
Chop and add tomato.
Serving Size: makes 12 1/2-c servings
