Meg's apple walnut muffins

Ingredients
1 cup rolled oats1 cup whole wheat flour1 cup wheat germ1/2 tsp cinnamon1 tsp baking powder1 tsp baking soda1/2 tsp salt1 cup 2% milk1/2 cup mashed banana1 egg, beaten1 tsp vanilla1 cup grated apple1/3 cup walnuts, toasted and chopped
Directions
Pour milk over oats and let sit 10 minutes, Preheat oven to 400F.

Combine all remaining dry ingredients. Combine all remaining wet ingredients except apple and walnuts. When oats have soaked, mix everything together including apple and walnuts - just until mixed.
Grease muffin pan. Fill 11 muffin cups.

Bake for 20 or 25 muffins, until cake tester comes out clean. Cool in pan 10 minutes, then remove to rack.
