Canola Cooking Spray1 cup nonfat refried beans1/3 cup Birdseye Ultimate southwest vegetable blend 6 Tbl Trader Joe's Cowboy Caviar Salsa1 cup tap water2/3 cup yellow cornmeal1 Tbl chili powder2 dashes garlic salt1 Tbl Smart Balance Buttery Spread light2 Tbl Lite Sharp Irish Cheddar shredded
Preheat oven to 400 degrees.
Spray one small bread loaf pan or 2 small casserole dishes with cooking oil.
For bean filling bring beans and vegetables, and salsa to simmer stirring constantly.
In a separate sauce pan. Make cornmeal crust.
Mix water,cornmeal, chili powder, garlic salt, and margarine . Bring to boil and stir until thickened to paste.
Spread cornmeal on bottom and sides of pan. leave a few tablespoons.
Fill center with bean mixture and top with a few dollups or cornmeal.
Bake at 350 for 30 minutes.
Top with shredded cheese and let cool slightly before serving.
Serving Size: Makes One small loaf pan.
