Sweet Potato Quinoa Muffins

Ingredients
Ingredients:2 cup cooked quinoa2 cup cooked sweet potato4 tbsp milled flax seed1/4 cup bulgur wheat1 cup whole wheat flour1 cup brown sugar1/4 cup applesauce1 tbsp Pumpkin Pie spice1/4 tsp salt2 tsp baking soda1/2 tsp baking power2 eggs1 tsp vanilla
Directions
Mix all the wet ingredients together. Mix all the dry ingredients together, then add to the wet mixture. Drop into pre-sprayed muffin tins. I don't recommend paper cups, as they will stick to the muffins. Bake at 350F for approx 35-40minutes.
