-4 to 4 1/4 C homemade or low sodium vegetable stock (I had made my own so I just used the nutrition of one online)-1/2 C dried split peas-1/2 C small whole green lentils-1/4 C Organic Red Quinoa
---Combine all ingredients EXCEPT QUINOA in a med. to large pot covered but slightly vented. Bring to a boil and then reduce heat to simmer. Cook for about 25 min., stirring about every 5 minutes then add the Quinoa and stir again. Cook another 15-20 min. or until legumes are all tender. Let sit for 5 minutes.
---Drain and rinse well in fine strainer.
---Makes 6 servings of 1/2 C each.
