Roasted Asparagus with Feta and Dijon Mustard/Balsamic Vinegar Drizzle.

Ingredients
1 bunch of Asparagus1 tbsp Extra Virgin Olive OilSalt and Black Pepper to taste1 ½ tsp Grey Poupon Dijon Mustard1 tbsp Balsamic Vinegar2 tbsp Reduced Fat Feta Cheese
Directions
Preheat oven to 425 degrees. Toss asparagus with ½ tbsp. olive oil, salt and pepper.

Arrange tossed asparagus in single layer on foil lined rimmed cookie sheet.

Place in the oven, roast until tender and the tips are golden and slightly charred, about 10-12 minutes.

In a small bowl, mix Dijon Mustard, vinegar, and ½ tbsp. olive oil and a dash of salt and pepper. Whisk until will mixed.

Place asparagus on a serving plate, drizzle with mustard/vinegar mixture. Sprinkle with Reduced Fat Feta Cheese.
