Sausage and Barley Italian Bake

3 cups cooked barley4 link Italian turkey sausage1 large onion, chopped4 garlic cloves, minced8 oz mushrooms, sliced1 teaspoon olive oil1 cup roasted red peppers3 cups prepared spaghetti sauce
Cook sausage, mushrooms, onions, and garlic in 1 teaspoon olive oil. Add cooked barley, spaghetti sauce, and roasted peppers.
Pour into casserole dish. Bake for 30 minutes at 350 degrees, covered. Remove lid. Top with 1 cup mozzarella cheese. Bake for 10 additional minutes.
