Fruit Topping:2 kiwis1 c. sliced strawberries1 c. blueberriesCrust: 1 c. whole rolled oats1/8 c. almonds1/8 c. pecans1 Tbsp coconut oil1 pinch salt8 Tbsp ice cold waterCustard:2 cups Vanilla Greek Yogurt½ oz Tbsp lemon juice¼ cup whipped cream1 Tbsp honey
Slice fruit and set aside.
In a food processor, coarsely mix oats, almonds, pecans, oil, salt, and water. Press into a pie pan. Prebake for 10 minutes at 350 degrees.
To make filling, combine yogurt, lemon, whipped cream, and honey. Chill for at least 15 minutes in the fridge.
Pour filling into crust and chill. Top with fresh fruit before serving. Serves 8 wedges.
