4 c. diced leftover turkey1 c. diced green onion1/2 t. cumin1/2 t. garlic powder1/2 t. chili powder8 oz. cream cheese, 1/3 less fat3/4 c. salsaenchilada sauce (made with 1 pkg enchilada sauce mix, 1 1/2 c. water, and 8 oz. tomato sauce)1 c. shredded mexican style four cheese7 whole wheat flour tortillas
Make the enchilada sauce. Mix all the ingredients together, except the shredded cheese, tortillas, and 1/2 c. enchilada sauce. In a 9x13 pan layer 2 tortillas, 1/2 meat mixture and 1/2 c. shredded cheese. Makes 2 layers. Place 3 tortillas on top then the 1/2 c. enchilada sauce. Bake uncovered at 350 degrees for 30 minutes
