Lentil salad with rice, ham, spinach & chipotle dressing (1 1/2 c)

Dressing (makes 1 c, use 1/4 c for salad)3/4 c olive oil1/4 c balsamic vinegar1 chipotle chili (canned), chopped finely1 tsp oregano1 tsp chipotle canning liquidSalad:2/3 c lentils1/2 c rice, long-grain preferred1 Tbsp salt1 bag baby spinach (6 oz)4 oz ham, chopped1 cucumber, chopped1 red bell pepper, roasted, peeled & chopped1 small red onion, sliced thinly
Make dressing: add ingredients to jar & shake.
Roast, peel, seed & chop pepper.
Boil rice, lentils & 1 Tbsp salt in 2 Qt water for 15 min. Drain over the onions. Add to large bowl with spinach. Add ham, cucumber, red bell pepper & 1/4 c. dressing. Toss well.
Serving Size: Makes 6 servings (1 1/2 c)
