Cheddar Potato Soup

3/4 cup diced onion2 1/2 cups peeled and diced potatoes32 oz carton chicken broth1/4 tsp salt1/8 tsp pepper1/4 cup flour3/4 cup half and half1 cup shredded cheddar cheese
In a skillet brown onion.
In a crock pot add potatoes, onion and chicken broth. Let cook on low for 6-7 hours.
In a small bowl mix half and half with flour, stir with whisk until mixed well. Add to crock pot and increase to high for 20 minutes or until thickened.
Stir in cheese until well melted.
Serving Size: Makes 4 1-cup servings.
