Gluten-free pasta salad

Ingredients

1 box quinoa pasta1 tomato, chopped1 slice onion, finely minced1-2 stalks celery, diced1-2 carrots, diced1 stalk broccoli, finely chopped1-2 T balsamic vinaigrette (to taste)1-2 T olive oil (to taste)
1. Cook pasta according to instructions. Rinse well in cold water once cooked.
2. Add all chopped veggies. Optional: mix in some fresh parsley or other herbs.
3. Drizzle with vinegar, oil, or dressing. Stir well, and refrigerate for at least an hour before eating.
Serving Size: Makes 6 servings of about 1 cup each
