Taco stuffed peppers

Ingredients
2 bell peppers1/2 pound ground turkey1 c prepared black beans1 c cooked brown rice1 packet taco seasoning1/3 c water1/2 c salsa1/4 shredded cheddar cheese
Directions
Brown and crumble the ground turkey. Add taco seasoning and water and simmer until absorbed. Add rice, beans, and salsa. Simmer briefly to warm and combine. Slice each bell pepper in half lengthwise and scoop out the seeds. Stuff each half with taco filling. Sprinkle each half with cheddar cheese. Bake at 350 degrees for 45 minutes or until pepper is softened.
