1 tablespoon canola, rapeseed oil312g pack of Quorn, chicken flavour fillets250g skinless and boneless chicken breast fillets1kg Oriental style frozen mixed vegetables550g Sliced mushrooms2 medium onions, chopped0.5 can, 200ml low fat coconut milk1 tablespoon, 15g Thai green curry pastesalt to taste
Fry chicken and quorn fillets until golden brown on both sides. Remove from pan and cut into bite sized pieces.
Add onions, green curry paste, chopped onions and mushrooms to the pan and sweat until onions are translucent. Add coconut milk and oriental style vegetables and cook for 5-10 minutes.
Serve with rice or potatoes.
