apple muffins

Ingredients
Apples, fresh, 4 small (2-1/2" dia) (approx 4 per lb Brown Sugar, 1 cup, packed Granulated Sugar, 1 cup Butter, unsalted, 1 stick *Whole Wheat Flour, 1 cup *Wheat flour, white, all-purpose, enriched, calcium-fortified, 1 cup Old Fashioned Quaker Oatmeal- Plain , 1 cup dry Egg, fresh, whole, raw, 2 large Baking Powder, 1 tsp Baking Soda, .5 tsp Cinnamon, ginger, nutmeg, salt, vanilla
Directions
grate two apples and mix with 1/2 of white sugar. Chop other two apples and toss into sugar as well (to prevent browning)
Cream together 6 TBS butter, remaining white sugar and all but /14 cup of brown sugar. Add eggs. Add spices and vanilla. (I just guesstimate the amounts)

Stir in apples and remaining sugar, then add dry ingredients--less 2 TBS white flour, adding oatmeal after the flour has been incorporated.

Fill muffin cups no more than 2/3 full.

mix remaining flour and brown sugar with more cinnamon and cut in the remaining butter until it looks like crumbs, sprinkle on top of muffins. Bake 20 minutes or so.
