Vegetarian sausage bake

Ingredients
Directions
Bulk vegetarian sausage, spinach, Monterey Jack or soy cheese, stuffing mix, onions, soy milk, and eggs (or substitute). That's it. Lesss than 1 hour start to finish.
Oven 400 degrees
Serving size: 12
1. Prepare stuffing mix according to directions. (Or use whole wheat crumbs, add 1/2 cup celery, chopped and herbs to suit.
2. Grate 1 1/2 cups Monterey Jack or 6 0z. soy cheese.
3.Chop green onions and 'sausage'' and cook in saute pan with 1/4 cup water until onions are soft.
4. Mix all ingredients ( except milk and eggs) and 1/2 cup cheese together9", sprayed pan. Top with remaing cheese. Pour milk and 'egg' mixture over top.
5. Bake 30 minutes at 400 degrees. Serves 12.
