5 cups chopped toms3 cups chopped red onion2 cups chopped sweet potato2 cups water1 habanero pepper2 cups bell pepper85g tomato purée560g can La Sierra black beans, drained1 tsp ground cinnamon1 tsp ground cumin 1 cup grated carrot4 cloves garlic, chopped
I started with the onions and tomatoes in a large pan over a medium heat then added the potatoes, peppers, water and spices. Lastly the beans, tomato purée and chopped garlic. I then let it all simmer on a low heat, covered, until the potato was soft. It then sat a few hours until dinner time and was very yummy :D
