Vegan/Vegetarian Sausage Bake

Bulk Prosage or other vegan 'sausage'10 oz. frozen, spinach, thawed and squeezed dry.3 0z. chopped green onions1 6 oz package Stove Top or other homemade stuffing mix3 large eggs or vegan substitute6 oz. cheese (or soy or rice cheese)1 1/2 cups soy milk (plain or Vanilla)
Oven 400
Servings 12
1. Thaw spinach and squeeze dry.
2.Prepare cooked Stuffin as directed or add 1.5 cups water to ww crumbs plus herbs and 1/2 cup celery.
3. In 1/4 cup water add chopped green onions
and bulk sausage in crumbled pieces 'til onions are soft.
4. Mix 1 cup cheese with cooked stuffing and sausage mixture.
5. Top with remaing cheeseSpread in 13 x 9", sprayed pan.
6. Pour soy milk with beat in 'eggs' over all ingredients.
Bake 30 minutes at 400 degrees. Serves 12
