Chad's Protein Bars

Ingredients
2 cups oatmeal1/3 cup protein powder1/3 cup brown sugar¼ cup dry malt extract1/3 cup flax seed meal1/3 cup almond meal1/3 cup toasted wheat germ1/3 cup cocoa powder2/3 cup chopped nuts (peanuts, almonds, etc)½ tsp salt1/3 cup craisins (cranberry raisins)1/3 cup chopped dates2/3 cup flaked coconut¼ cup mini chocolate chips (optional)1/4 cup chia seeds2 tbsp canola oil2 to 3 tbsp local honey½ cup vanilla soy milk½ cup peanut butter¼ cup cashew butter1 tsp vanilla extract
Directions
Combine dry ingredients first and then add wet ingredients. Mix well then turn on to a sheet of wax paper. Form into a long rectangular log. Wrap tightly with the wax paper and refrigerate or freeze overnight until firm. Cut into ½ inch wide bars and wrap individually with cling wrap. Makes about 18-20 bars.
