Chicken Fajita Lettuce Wraps

1 head of iceberg lettuce2 lbs. boneless skinless chicken breasts1 onion, medium peeled and thinly sliced2 regular bell peppers, rinsed, seeded, sliced1.5 tbs canola oil2 tbs fajita seasoning
1. Add 1 tbs canola oil to skillet over med/high heat and add chicken
2. Once chicken is fully cooked, set aside. Add 1/2 tbs canola oil to same skillet and toss in peppers and onions. Saute over medium hear until softened.
3. Add chicken to the onions and peppers.
4. Add fajita seasoning w/ 1/4 cup water or until good consistency.
5. Saute over med heat until flavors are blended
6. Fill lettuce leaves with mixture, dbl on leaves for better handling.
Serving Size: 8 4-oz servings, could make smaller
