Slow Cooker Orange Chicken and vegetables

Ingredients
2 large carrots, peeled and sliced about 1/2-inch thick2 large bell peppers, cut into 1/2-inch chunks3 cloves garlic, minced1 lb. boneless skinless chicken breast2 tsp. ground ginger1 tsp. salt1/2 tsp. black pepper8 oz. orange juice concentrate2 green onions, chopped4 cups cooked brown rice
Directions
Put carrots, peppers, chicken, ginger, salt & pepper, and orange juice in crock pot. Cook on low for 4-6 hours.

Serve over cooked rice and top with green onions. Serve chicken liquid in gravy boat, if desired.
