Ingredients
1 egg, beaten3 TBL of Thai Kitchen full-fat coconut milk, or comparable brand1 tsp of Nectresse sweetener, or Splenda1/2 tsp of vanilla extract (Optional)1/4 tsp of baking powder2 TBL of unsweetened cocoa powder
Directions
Mix all and mix well. Pour into a microwave-proof mug (spray the inside of mug with Pam for easy cleanup). Microwave for 1 minute.
