Quick Lemon Cucumber Tomato Salad

Ingredients
2 Cucumbers - halved and sliced1/4 cup onion - chopped3 Plum Tomatoes - Chopped1/2 Fresh Lemon Juice1 Tsp Fresh Lemon Zest 7 Stalks of Celery - Chopped1/3 cup Parsley - Chopped2 Cloves of Fresh Garlic - Minced1 Tsp of Olive Oil1 Tbsp of Water2 tsp of Kosher Salt2 tsp of Fresh Ground Pepper
Directions
1. Combine all chopped vegetables into a bowl.
2. Add Salt and Pepper
3. Combine Juice of Lemon, Lemon Zest, Water and Olive Oil, Parsley and minced Garlic then pour over salad and mix well.
Refrigerate for 1 hour before serving
