Sort of Like Rachel Ray's Mexican Lasagna

1/2 red onion, diced2 red bell peppers, dicedBaby Bella mushrooms, slicedgarliccuminchili powdersalt & pepper2 jalapeno peppers, diced1 # ground chicken1 can black beans, rinsed1 can reduced sodium corn, drained1 can Rotel tomatoes4 10" Spinach Tortillas2 cups reduced Mexican cheese blend
Saute onion, peppers & mushrooms. Add garlic and seasonings. Add chicken and cook until no pink remains. Add Rotel tomatoes and refried beans.
Place a tortilla at the bottom of 2 10" pie plates. Add layer of cooked mixture. Add another tortilla, the corn and beans and top with cheese. Bake at 350 for 20-30 minutes.
1 serving = 1/4 of pie.
