Ingredients
2 Cups Brown Rice, cooked (leftover works best)1/2 Cup Frozen Peas and Carrots1 Tbsp Extra Virgin Olive Oil1 Tbsp Lite Soy Sauce
Directions
Heat olive oil over medium-high heat. Add rice, peas and carrots, and soy sauce. Stir fry until carrots are heated through, about 5-7 minutes.

Makes 4 1/2-cup servings.
