Parmesan Potatoes

Ingredients
2 small red Potato (4-5 oz each), thinly sliced1 Tbsp. soft margarine (about 60 cal per Tbsp), melted1/2 tsp. garlic powder2 tbsp. grated Parmesan Cheese,1 oz shredded part skim mozzarella cheese
Directions
Can be grilled or baked


To Grill in Foil:
-- Preheat grill while preparing potatoes.
-- Spray 2 squares of heavy duty foil (or double layer of regular foil) with non-stick cooking spray.
-- Place each sliced potatoes on a square of foil.
-- Mix margarine and garlic powder. Drizzle about 1/2 Tbsp over each potato; toss to coat. Sprinkle with Parmesan and mozzarella.
-- Fold up foil to enclose potatoes. Reduce heat to medium and place packets on grill. Grill about 15 minutes or until tender, turning occasionally (close grill between turning).


To Bake in Oven
-- Preheat oven to 400 degrees.
-- Spray small baking dish with non-stick spray.
-- Place potato slices in dish. Combine margarine and garlic powder. Drizzle over potatoes; toss to coat. Add Parmesan and toss to coat. Sprinkle with mozzarella.
-- Bake 15 minutes or until tender.
