MF Italian Vegetable Bake

Ingredients
1/2 large can (1-1/2 cups) Whole Plum tomatoes (5 grams or less of carbs per serving), such as Tuttorosso = 3, 1/2 cup servings or 3 green1/4 cup (4 TBLs) minced fresh onion = 4 condiments (1 TBL each)1-1/2 cups canned or frozen (cooked) green beans = 3 greens 3/4 cup Bell pepper, red, green or yellow, finely chopped = 1-1/2 greens1 TBL lemon juice = 1 condiment1 tsp dried Basil leaves = 2 condiments 1/2 tsp Oregano = 1 condiment3 medium fresh zucchini, peeled and cut into chunks (should be 1-1/2 cups Zucchini (cooked)) = 3 greens
Directions
Preheat oven to 325. Drain and coarsely chop tomatoes (reserve liquid). Mix tomatoes, liquid, onion, green beans, green pepper, lemon juice and spices. Pour into a PAM-sprayed casserole dish (I used an 8x8 baking pan). Cover and bake for 15 minutes. The mix in raw zucchini (cut into chunks). Recover and continue baking 45-60 minutes or until veggies are tender.
Prior to serving you may sprinkle with 1 TBL greated parmesan cheese (= 1 additional condiment).2-1/4 greens and 3 condiments (4 if you add the parm cheese). So you can have 3/4 cup lettuce as a side salad. I have this with turkey meatloaf. Delicious!
