Eggplant and Sausage patties

Ingredients
16 oz. Bob Evans Savory Sage Sausage, cooked eggplant, peeled, diced and cooked 2 large eggs1 1/2 cups flour shredded cheeseolive oil for cooking
Directions
Peel and dice eggplant cook in water until soft and can be mashed, drain well.
Meanwhile cook sausage and crumble, when done drain well. Mix eggplant and sausage together and cool.
Mix egg and cheese (if using) into eggplant and sausage mixture and add enough flour to make a thick mixture. Drop by spoonful on greased skillet and brown on each side. Only takes a few minutes per side.

Serving Size: makes 12 small patties
