Zuchinni Yellow Squash Casserole

Ingredients
Directions
4 c. sliced squash1/2 lg onion-chopped1 sleeve ritz crackers (crushed)1 c. Grated Cheddar Cheese2 eggs3/4 c. milk1/2 c. melted butter
Preheat oven to 400
Lightly steam squash & onion for 5 min. & set aside.
In medium bowl combine crushed cracker crumbs & cheese.
In lg. bowl add squash & onion & gently fold in 1/2 of the cheese & cracker mixture.
In small bowl whisk eggs & milk. Add to squash mixture.
Melt the butter. Add 1/2 the butter & season with salt & pepper.
Spread squash into 9x13 casserole dish and top with remaining cracker mix and pour butter on top.
Bake for 25 min. until lightly browned
