Mupp's Apple Bran Oat Muffins

3/4 cups unprocessed wheat bran3/4 cups 5 grain rolled whole grain cereal1 cup skim milk1 teaspoon lemon juice1/3 unsweetened apple sauce1 egg2/3 cup brown sugar1 small over ripe banana1 teaspoon vanilla extract1 teaspoon cinnamonadd nutmeg, clove and ginger to taste1 cup whole wheat flour1 teaspoon backing soda1 teaspoon baking powder1/2 teaspoon salt1 large granny smith apple shredded with skin (or apple of your choice)
Makes 18 medium - small muffins.
1. Preheat oven to 375 degrees F. Grease muffin cups or line with paper muffin liners.
2. Mix wheat bran, oats and milk and lemon juice; let stand for 10 minutes.
3. Beat together egg, applesauce, sugar, vanilla, banana and spices and add to bran mixture. Sift together flour, baking soda, baking powder and salt. Stir flour mixture into bran mixture until just blended. Fold in shredded apple and pecans and spoon batter into prepared muffin tins.
4. Bake 15 - 20 minutes or until a toothpick inserted comes out clean.
