Chocolate Paleo Snack Cake

10 medjool dates, pitted1 cup unsweetened applesauce3 eggs1/2 cup coconut oil2 teaspoons vanilla extract1/2 cup coconut flour1/2 cup unsweetened cocoa powder1 teaspoon baking soda1/2 teaspoon fine celtic seas salt1/2 cup strong brewed coffee
Place dates in food processor and pulse until completely pureed.
Add applesauce and continue to pulse until pureed and combined with dates.
Add puree to the bowl if a stand mixer, add eggs, vanilla, coconut oil, and coffee and mix on low speed/medium speed until well combined.
Combined dry ingredients in a separate bowl.
Slowly add the dry ingredients into wet ingredients and mix on low, scraping down sides, until you have a smooth batter.
Grease a 8x8 glass pan with coconut oil, pour in the batter and smooth it with the back of a spatula.
Bake at 350 degrees for 30-35 minutes until a wooden toothpick stuck in the middle comes out clean.
Serving Size: makes 12 snack size cakes
