Lentil and Swiss Chard Soup

1 tablespoons olive oil1 onion, chopped fine2 cloves garlic, minced1 teaspoon dried thyme1 bay leaf1 tablespoon tomato paste15 ounce can tomatoes4 cup vegetable broth (or water)1 cup lentils, rinsed 1 bunch chard, stems removed and choppedsalt and pepper to taste
Saute onion in olive oil for 10 minutes or until they are transparent. Add chard stems and garlic. Continue cooking until chard stems are softened. Add thyme, bay leaf, can of tomatoes, tomato paste and vegetable broth. Bring liquid to a simmer. Add the lentils. Cook for about 30 minutes or until are done. Cut the chard leaves into narrow ribbons and add to the soup pot. Cook for another 10 minutes. Season with salt and pepper.
