1/2 pound Italian Sausage1, 3 lb Chicken8 cups Water1 tbps Salt Mixed Vegetables, frozen, 1 package (10 oz) 1/2 tsp Black Pepper1 tbls Onions, dehydrated flakes4 -5 sprigs of fresh Thyme6-8 fresh oregano leaves5 fresh Basil leavesGarlic, 1 clove
This soup makes 10 - 12 servings. You can speed up the process by picking up a deli chicken and using it instead of cooking the fresh chicken. In a large stock pot brown your sausage. Add 1 cup of water and deglaze the pan (stir the brown bits from the sausage off the bottom of the pan). Add remaining water, the skinned fresh chicken, onion, garlic and herbs. Simmer for 30 minutes. Add water as needed to maintain the level of liquid. Remove chicken and pull the meat off the bones (if you used a deli chicken pull the skin off and de-bone the chicken). Dice the chicken meat and return it to the stock. Add veggies to the soup, cover and simmer for 10-15 miniutes. Serve Hot.
