Green Chili Pork and Potatoes

6 oz Pork chops, diced small5 cups diced potatoes1/2 cup diced onions3 cups beef broth1 cup diced green chili (Fresh or Hatch canned)1 cup shredded carrots1 Tb corn starch3 Tb water1 Tb Olive oil
Cook pork in olive oil on med-high heat, until brown. Add potatoes and continue cooking until potatoes are brown and tender, about 5-7 minutes. Reduce heat and cover. In a sauce pan, cook the onions, carrots, and green chili with 1/4 cup of the broth, until Carrots and onions are tender. Add the rest of the broth, and heat to boiling. In a cup or small shaker, mix the corn starch with 3 Tb cold water, and slowly add to the sauce, stirring continuously. Reduce heat and allow to simmer, about 5 minutes, until the broth thickens. Add this to the pork and potatoes, and stir.
