No-Fat Mocha Cake

Ingredients
1 c. flour6 T. baking cocoa1 t. baking powder1 t. baking soda6 large egg whites, room temp1 1/4 c. packed light brown sugar6 oz. coffee flavored yogurt1 t. vanilla1 t. powdered sugar1/2 t. cinnamon
Directions
Preheat oven to 350F. Line the bottom of a 9 inch cake pan with waxed paper. Spray pan and paper with vegetable spray. Dust pan with small amount of cocoa, tap out excess. Set aside.

Sift flour, 5 tablespoons cocoa, espresso powder, baking powder, and baking soda into a medium bowl.

Using electric mixer, beat egg whites, brown sugar, yogurt, and vanilla in large bowl until blended, about 1 minute.

Fold in dry ingredients. Transfer to prepared pan.

Bake until tester inserted into center of cake comes out clean, about 35 minutes. Cut around edges of pan to loosen cake. Turn out unto plate. Peel off paper and cool completely. Put together remaining 1 tablespoon cocoa, powdered sugar and cinnamon in small bowl. Sift over cake before serving.

Cut into 8 pieces. Serving size is one piece.
