easy black beans & yellow rice

Ingredients
5 oz pkg saffron yellow rice (i use mahatma)15 oz can black beans1/4 cup shredded kraft taco cheese2 tbsp reduced fat sour cream~~~if preferred:goya adobo seasoningchopped green onionssalsa
Directions
Cook yellow rice per directions, but without the added butter. Cook black beans per directions. To serve, ladle black beans over yellow rice. Top with taco cheese and sour cream.

I prefer to add adobo seasoning & onions. My friends add salsa. This is quick & wonderful - very filling!!

    Easy, quick (no more than 5 mins prep, 25 mins cooking) and simple ingredients. Only complaint we had was that the beans didn't taste as good as the rice, but maybe some more creative seasoning was needed. Overall, nice for an easy lunch! - 5/30/11
