1 egg1 1/2 cups almond milk (or milk of choice)1/2 cup applesauce (no sugar added)3 Tbsp Honey1 teas vanilla extract1 1/2 teas ground cinnamon2 cups old fashioned oats1 teas baking powder1 cup whole wheat flourpinch salt3/4 cup dried fruit of choice1/2 cup chopped nuts of choice1/2 cup mini chocolate chips (optional)1/2 cup flaked unsweetened coconut (optional)
Preheat oven to 375 degrees. Grease an 11" x 9" baking dish.
In a medium bowl mix all wet ingredients together well.
In another larger bowl mix all dry ingredients (not fruit or nuts) together and mix well.
Mix the wet and dry ingredients together until well mixed. Stir in the fruit and nuts. Transfer to baking dish and place in oven. Cut into 12 pieces when done.
