Zucchini and Yellow Squash Stir Fry

Ingredients
1 medium zucchini sliced (about 2 cups)1 medium summer squash sliced (about 2 cups)1 small onion sliced (about 1cup)Herbs and seasonings to taste, I like a garlic and herb blend my tones that has no salt or MSG. or Cajun seasoning (this can get spicy)
Directions
1) Spray a non stick pan with cooking spray
2) Add all veggies and seasoning.
3) Cook on medium heat until veggies are fully cooked about 10 to 15 minutes.

Makes 3 1 cup servings.

    I made this for years with olive oil. Now I use an olive oil spray and add fresh basil and/or oregano. It is great added to scrambles eggs. I use egg beaters or i egg and egg whites. - 7/25/09
