Tuna Stuffed Potato

Ingredients
2 Russet Baking Potatoes4 oz. Bumblebee chunk white albacore tuna4 T minced white or yellow onion1 T minced carrot1/2 cup chopped parsley2 T Kraft Light Mayo1/3 t Tabasco sauce1 t Original Spike seasoning
Directions
Bake the potatoes at 375 for 1 to 1 1/2 hours. Meanwhile, mix the remaining 7 ingredients in a bowl. When potatoes are cooked, remove them and let them cool until able to be held. Removed the insides from the potato, leaving about 1/4 around inside of shell. Mix the potato insides with the other 7 ingredients, then stuff back into the potato shells.
